Soups are delicious and provide important nutrients to our body. When preparing them, they usually take a bit of time, but it is worth it. With the exquisite flavor along with the sweet smell that permeates the room, soups are always a great meal. 

Because of the blend of so many ingredients, a good soup makes a happy heart.  They are healthy and provide necessary protein and nutrients without a lot of fats. Check out these three hearty and heart-healthy soups.

Southwestern Chicken and Vegetable Soup

In this one, you get the super flavor of chicken with the mix of vegetables.  Now, just think about this soup made of all types of vegetables, swimming in a fragrant broth with bits of chicken?  It's a caress to the palate.  

This soup is spiked with a shot of fresh lime and cilantro. As well, the roasted poblano peppers and garlic give it a nice smoky flavor. This healthy chicken soup is gluten-free, low calorie, and is high in fiber.  

The main ingredients here are:

  • poblano peppers
  • chicken thighs
  • green bell peppers
  • onion
  • green beans
  • garlic
  • chili powder
  • chicken broth
  • cumin
  • tomatoes
  • spinach
  • corn kernels
  • cilantro
  • lime juice

Roasted Tomato and Vegetable Soup

This one is perfect to prepare in the slow cooker to cook all day. This veggie soup is ideal for those who have decided to avoid eating meat. It is a side dish that could add tremendous nutritional value. 

  •  Roasted tomato slices
  • Any and as many vegetables as you have available
  • Seasoning to taste
  • Uncooked gluten-free pasta – optional

This soup is egg-free, dairy-free, gluten-free, and soy-free. It provides the protein content you need. Basically, the soup includes all types of vegetables including roasted tomatoes.  

Lentil Stew

The lentil stew is a delicious dish that provides all the goodness of a great soup.

  • 1 onion, chopped
  • 2 or 3 celery sticks, chopped
  • 1 medium-sized zucchini, chopped
  • 1 small sweet potato, peeled and chopped
  • Garlic, salt and pepper to taste
  • Chopped parsley
  • 1 cup of dried lentils
  • Beef stock

Combine all the ingredients in a slow cooker with enough beef stock to cover the vegetables.

This soup can be enjoyed as a main course or as a side dish. Either way, it is still delicious.
